Sunday 5/24 started out with some overcast which made it very easy to have a lazy kick back morning. It was a perfect feeling morning that set me up to watch the Indy 500. Just what I wanted for the day.
But as the race ended the sun popped out and it just seemed natural to start being productive. The next thing I knew we were cleaning up the Prius getting it ready for storage, gathering a few things that we wanted to put in storage and were on our way to get things all stowed and covered at our storage unit until we come back next year. A little more productive than I had planned but it all needed to be done so it worked out.
After finishing at the storage unit we made our way over to our friends Rich & Chris’s house for one last visit before we leave the area.
We sat around visiting for a few hours before saying, See ya next year, to them, Jack & Felix and were on our way home where we chilled the rest of the evening.
Monday 5/25 was supposed to be a 100% do nothing day but Diane saw an ad that showed REI had a sale going on the hiking boots she has been wanting. So after a quick call to make sure they in fact had a pair in her size in stock we were off to pick them up. One last thing taken care of before leaving the no sales tax state of Oregon LOL!!
Once our trip to get the shoes was complete we spent the rest of the day walking and bike riding around the park. There is a great walking trail just outside the park that we really like.
A couple days ago we BBQed a Tri-Tip that turned out to be the worst Tri-Tip I had ever come across. That particular cut of meat was just horrible!!! Now because I’m not a wasteful type I just couldn’t bring myself to through it in the garbage (yes, it was that bad) so I decided to cut it into small bite size pieces while cutting out all the gristle and fat, tossed some Sweet Baby James, A1 steak sauce, Teriyaki sauce and some brown sugar on it, mixed it all together and let it set for a couple hours before tossing it on the smoker where I let it get all happy for 2 hours at 225 degrees.
I figured what the heck, it couldn’t get any worse and as it turned out the meat got very tender and everything mixed together with the brown sugar caramelized nicely around the bite sized pieces of meat and made for a very nice snack.
After a light dinner we headed out for a couple mile walk before showering and calling it an evening.
So yup, another nice, pretty relaxing day.
Tuesday will be doctor’s appointments and DMV and picking up camp so we can get ready for a 6am departure on Wednesday.
